Sausage Pancakes

Oh my goodness, people. Talk about starting the day off right. Even if you get up on the wrong side of the bed, a plate of these will shape you right up. The perfect sweet + savory combination. And really, really easy.


Ingredients
1 1/2 cups all-purpose flour
3 tbsp. sugar
2 tsp. baking powder
1 1/2 tsp. salt
1/2 cup sour cream
3/4 cup + 1 tbsp. milk
2 eggs
1 tsp. vanilla
Jimmy Dean breakfast sausage (my mom always bought the sage flavor, so I do, too)


Directions
1. In a large skillet, cook the sausage. Set aside.
2. In a large mixing bowl, combine the flour, sugar, baking powder and salt. Set aside.
3. In a medium mixing bowl, whisk together the sour cream, milk, eggs and vanilla. 
4. Add the wet ingredients to the dry, whisking just until all the lumps are gone and the batter is smooth.
5. Heat a skillet or griddle over medium heat (spray if it is not non-stick) and pour 1/4 cup of the batter at a time onto the heated surface.
6. Place some of the crumbled sausage on top.
7. When bubbles appear on the top, flip the pancakes and cook until just set.
8. Serve with butter and maple syrup.


And try not to eat the whole batch!
