Stuffed Sweet Peppers

I saw these peppers...smaller, sweeter, longer versions of bell peppers...at the local produce shop (on-sale, even better!) and had the urge to stuff them with some salty goodness. So I combined the steps from my stuffed peppers recipe and my favorite meatball recipe..and voila! Perfect. Stuffed. Sweet. Peppers. Yes!


Ingredients
8-10 sweet peppers (depending on what you find, you can use the leftover meatball mixture for...you guessed it...meatballs! You can throw them in the freezer and pull them out when needed)

Directions
1. Preheat the oven to 350 degrees.
2. Cut the tops of the sweet peppers and clean out the seeds.
3. Bring a large pot of salted water to a boil and follow these steps for preparing the peppers.
4. Then make the meatball mixture.
5. Stuff the peppers with the meatball mixture pretty tightly.
6. Pour a couple tbsp. of water into the dish around the peppers.
7. Bake uncovered for 50 minutes until baked through and crispy on the top.
8. Serve with sauce or without...they're so flavorful even on their own.
