Horiatki

To accompany any good summer meal, I think it wise to combine some summery vegetables from the local market, some fresh herbs, olive oil, salt and pepper. You really cannot go wrong, especially with the vegetables so ripe right now. Here is one version of this no-fail combo...horiatki...a.k.a. Greek peasant salad. Keep in mind there are many versions of this, some more like the Greek panzanella recipe I'm so fond of. But with this one, I like to keep it simple.


Ingredients
1 english cucumber
1 large tomato
1/4 red or sweet onion (scallions will also do)
2-3 tbsp. fresh dill
Olive oil
Salt and black pepper


Directions
1. Peel the cucumber. This is optional, as the skin of an english cucumber is very thin and completely edible, but I like to skin it if I've got the time. Dice the cucumbers into bite-size chunks.
2. Seed the tomato and dice it into similar size pieces as the cucumber.
3. Chop the onion into small pieces.
4. Mince the fresh dill, stems removed.
5. Toss together in a medium mixing bowl, dress with just enough olive oil to coat. Sprinkle with salt and pepper.
6. Serve alongside chicken...steak...sausages...or some good Greek food. It's versatile...enjoy!
