Scallops

Buttery scallops, a touch of spicy, red paprika...oh yea! Served with a side of Greek peasant salad, you've got a delicious and relatively quick summer meal.


Ingredients
6-8 sea scallops
1/2 cup flour
1 tbsp. paprika
1 tsp. salt
1 tsp. black pepper
*to taste
1 tbsp. butter
Olive oil


Directions
1. Rinse scallops under cold water and pat dry.
2. In a small bowl, combine the flour, paprika, salt and pepper.
*Note: you can adjust the amount of paprika, salt and pepper to your liking...simply add more or less to the mixture.
3. Heat butter and olive oil in a large skillet over medium-high heat.
4. Dredge each scallop in the flour mixture, coating all sides. Shake any excess off and place in skillet.
5. Cook each scallop for 4-5 minutes on each side, or until golden brown and cooked through.
